Iowa State University scientist has published new research suggesting a
spoonful of oil makes vegetables more nutritious.

Scientists have discovered the body may absorb more of the orange’s
antioxidants from defrosted juice than it does from fresh or pasteurised
juice.

Drinking tea and orange juice could cut a woman’s risk of ovarian cancer
by up to a third, claim

A major 30-year study found that compounds in tea and citrus fruits
could protect against the devastating

A new study led by Wendy White, an associate professor of food science
and human nutrition, shows that eating salad with added fat in the form
of soybean oil promotes the absorption of eight different micronutrients
that promote human health. Conversely, eating the same salad without the
added oil lessens the likelihood that the body will absorb the
nutrients.

When orange juice is frozen and thawed out, health-giving elements of
the juice are broken down into smaller particles which are easier for
the intestines to soak up.

Ovarian cancer – known as the silent killer because women are often
diagnosed too late for a cure – affects almost 7,000 women a year in the
UK and kills more than

171,940 women aged 25 to 55 for more than three decades, found that
those who ate foods high in the antioxidant compounds flavonoids –
including tea, red wine, apples and citrus fruits – had a much lower
risk of developing ovarian

These particles, called carotenoids, are thought to have cancer-fighting
properties, can be converted to vitamin A, and have anti-inflammatory
and immune system benefits which may help to prevent heart disease.

The reduction was up to 31 per cent for tea drinkers and a fifth (21 per
cent) for those drinking large amounts of citrus fruit juices,
especially orange, the American Journal of Clinical Nutrition

The study appeared recently in the peer-reviewed American Journal of
Clinical Nutrition, and the results may ease the guilt of countless
dieters who fret about adding dressing to their salads.White’s study
found added oil aided in the absorption of seven different
micronutrients in salad vegetables. Those nutrients include four
carotenoids — alpha and beta carotene, lutein and lycopene — two forms
of vitamin E and vitamin K. The oil also promoted the absorption of
vitamin A, the eighth micronutrient tracked in the study, which formed
in the intestine from the alpha and beta carotene. The new study builds
on previous research from White’s group that focused on alpha and beta
carotene and lycopene.

Lead researcher Professor Aedin Cassidy, from Norwich Medical School,

several ways, such as by improving blood vessel function and preventing

The research by the University of Seville studied how freezing or
pasteurising orange juice affected the antioxidants.

Dr Simon Newman, head of research at Target Ovarian Cancer, said:
‘Whilst the causes and risks of ovarian cancer are complex, a healthy
lifestyle with a good diet and regular exercise can reduce your risk

juice, improves the healthiness of the juice and now hope to test their
theory outside of the lab.

The study also found that the amount of oil added to the vegetables had
a proportional relationship with the amount of nutrient absorption. That
